Can't Eat Just One Avocado Toast

Inspiration: Who doesn't like another way to eat more avocados.

 

INGREDIENTS

  1. 4 slices whole wheat or whole grain bread
  2. 2 ripe avocados, halved, pitted and peeled
  3. Salt and freshly ground pepper
  4. 1 tablespoon fresh lemon juice 
  5. 1 tablespoon The Zing Thing pepper flakes  
  6. 3 cherry tomatoes - sliced
  7. 3 tomatillo - sliced
  8. balsamic vinegar
  9. 2 tablespoons olive oil 
  10. chopped cilantro 
  11. chopped chives 

INSTRUCTIONS

  1. Mash the avocados with a fork in a shallow bowl.
  2. Season with salt, pepper, lemon juice and pepper flakes.
  3. Combine balsamic vinegar, olive oil, salt and pepper in a bowl—add tomatoes and tomatillos. Marinate for 15 minutes.
  4. Toast the bread until browned and crisp. Lightly brush the toast with olive oil and season with salt and pepper.
  5. Put equal amounts of the mashed avocado on toast.
  6. Cover avocado mash with marinated cherry tomatoes and tomatillos. 
  7. Sprinkle on cilantro and chives 
  8. Optional - add more of The Zing Thing pepper flakes 
  9. Enjoy!
