Pimento Cheese, Bacon, & Bologna Breakfast Sandwich

This is a creation from our co-founder, Saul, during his early morning breakfast


  • 1 slice bologna
  • 2 pieces of bacon
  • 1 egg
  • American or Cheddar Cheese
  • 1 tsp Dill
  • 1/2 tsp Chives
  • 2 tblsp butter
  • Pimento Cheese
  • Mayo
  • Butter buns
  • Salt & Pepper
  • The New Standard Pepper Flakes


  1. Heat Things Up: Start by melting a pat of butter in your skillet over medium heat.
  2. Sizzle That Bacon: Lay down those bacon strips and let them cook, flipping occasionally until they're crispy perfection.
  3. Bologna Time: While the bacon’s sizzling, add the bologna to the skillet. Pro tip: Cut a few slits in the bologna to make sure it cooks evenly.
  4. Brown It Up: Cook the bologna for about 2 minutes on each side until it’s nicely browned. Once done, set aside the bacon and bologna.
  5. Egg-cellent: Add a little more butter to the skillet to keep things non-stick. Crack in your egg, letting the bottom set and get those edges crispy before flipping. After a quick 10-second cook on the flip side, take it out.
  6. **Toast Those Buns**: Add another dab of butter and toast your buns until they’re golden.
  7. **Build Your Masterpiece**: Spread mayo on both buns and slather pimento cheese on the bottom half. Layer on a slice of cheddar, crispy bacon, bologna, fried egg, a sprinkle of your chopped herb blend, and a dash of pepper flakes.
