Not Your Mama's Salmon Bagel

Inspiration: bagel lover 



1/2lb fresh salmon with skin if available
1/3 cup thinly sliced red onion
1 tablespoon fresh dill (fresh is the best, if not available use dried) 
2 tablespoons capers, smashed and rough chopped
2 bagels, sliced  
salt and pepper to taste
New Standard Pepper Flakes
1/2 lemon 
optional: 1 hardboiled egg 
olive oil 


    1. Coat the salmon with olive oil
    2. Season salmon with salt, pepper, pepper flakes, and dill. 
    3. Pre-heat oven to 275 degrees 
    4. Place salmon in a shallow baking pan in oven for 10 - 12 minutes. Also great to cook on the grill with pecan wood chips.
    5. For Crispy Salmon Skin: When you remove salmon from oven, peel off salmon skin and place back in baking pan. Set oven to broil and cook for additional 5 minutes.
    6. Remove salmon from oven and slice it up into small pieces.
    7. Toast your bagel
    8. Spread cream cheese on the bottom half of bagel
    9. In this order—add capers, red onion, salmon, salmon skin, and dill to your bagel. (sometimes we like to slice up a hard boiled egg and top it with that)
    10. Squeeze lemon over the bottom half of your bagel and then close your bagel to make it a sandwich.
    11. Enjoy!
